If you make soy-marinated salmon at home, it generally needs to be refrigerated in the marinade for 12 to 24 hours to absorb enough flavor. If you buy it ready-made, it can be enjoyed as soon as you open the container. The timing depends on whether you are marinating the salmon yourself or ordering a fully prepared version.

Knowing the right marinating window helps the salmon reach the ideal balance — flavorful without being too mild or overly salty.

In this guide, Co Thao Tom Ca breaks down both cases: how long to marinate salmon at home, when ready-made soy-marinated salmon is ready to eat, and how to tell when the flavor has fully developed.

Soy-marinated salmon being refrigerated during the marinating process

How long should soy-marinated salmon be marinated before eating?

Homemade soy-marinated salmon is generally ready after 12 to 24 hours, while ready-made versions can be enjoyed immediately because they have already completed the marinating process in the kitchen.

When making it yourself, the waiting time is not meant to “cook” the salmon. Instead, it allows the soy marinade to gradually penetrate the flesh. The longer it marinates within the recommended window, the deeper and more even the flavor becomes. Eating it too early may leave the center under-seasoned while the sauce has only coated the surface.

How long should homemade soy-marinated salmon be marinated?

For homemade soy-marinated salmon, refrigerate it for at least 8 to 12 hours, with around 18 to 24 hours being the ideal range for fuller flavor. During this time, the soy marinade gradually penetrates the salmon, deepening both its color and seasoning.

The salmon should be kept refrigerated at 0-4°C throughout the marinating process.

Slice thickness also affects how quickly the flavor develops. Pieces around 1.5–2cm thick generally need more time than thinner slices. If you prefer thicker cuts, waiting around 18–24 hours will help the marinade reach the center more evenly.

What happens if salmon is marinated for too long?

Leaving salmon in the soy marinade for more than 36-48 hours may make it overly salty, soften the texture too much, and reduce its fresh quality. The salt in the soy sauce gradually draws moisture from the salmon, which can affect the firmness of the flesh.

The flavor may also shift from balanced savory-sweet notes toward a much saltier profile.

Beyond taste and texture, keeping raw seafood for too long can also raise food safety concerns if storage conditions are not properly maintained. A practical approach is to aim for around 24 hours of marinating, then enjoy the salmon within the following 1-2 days under proper refrigeration.

How to tell when soy-marinated salmon has reached the right flavor

Soy-marinated salmon is usually ready when the flesh develops an even pinkish-brown tone, feels slightly firmer, and has a glossy surface coated in marinade.

When lifted, each slice should still hold its shape rather than breaking apart or becoming mushy. If you cut into a piece, the center should also show some color from the marinade instead of remaining completely bright orange.

That is a good sign the salmon has absorbed enough flavor and is ready to enjoy.

Can ready-made soy-marinated salmon be eaten immediately?

Yes. Ready-made soy-marinated salmon can be enjoyed as soon as the container is opened because it has already been marinated for the required amount of time before leaving the kitchen.

There is no need to marinate it further or cook it again. That convenience is one of the biggest advantages of choosing a ready-made version.

One important note: do not microwave or reheat the seafood or soft-boiled eggs, as high heat will alter their original texture. If your meal comes with rice and the rice has cooled down, Co Thao Tom Ca recommends reheating the rice separately.

How soon should you enjoy soy-marinated salmon after buying it?

For the best experience, soy-marinated salmon should be enjoyed as soon as possible after delivery, ideally within the same day. Even when it remains within its recommended shelf life, freshness and texture gradually decline over time.

For rice sets, enjoy them within 2 hours so the rice stays soft and the seafood maintains its best texture.

Frequently asked questions

1. Should soy-marinated salmon be marinated in the refrigerator or freezer?

Soy-marinated salmon should be marinated in the refrigerator at 0-4°C, not in the freezer or at room temperature.

Freezing prevents the marinade from penetrating the salmon properly, while room temperature is not suitable for safely handling raw seafood.

2. Can you eat salmon immediately after adding the marinade?

It is better not to eat it immediately after marinating. At that point, the soy sauce has mainly coated the surface and has not had enough time to penetrate the center.

For better flavor, wait at least 8-12 hours, and ideally closer to 18-24 hours for thicker slices.

Getting the timing right is one of the simplest ways to make a flavorful batch of soy-marinated salmon. If you make it yourself, a little patience goes a long way. If you order it ready-made, simply open the container and enjoy.
